
MINSK, 20 October (BelTA) - Young scientists from Mogilev have developed a recipe for the brittle made from sprouted green buckwheat. The specifics of the idea were revealed in a news report by the STV television channel, BelTA has learned.
The young scientists from Mogilev have set an ambitious goal: to create a product that will challenge imported grain bars in the healthy food segment of the domestic market. They view the creation of the brittle made from sprouted green buckwheat not merely as a scientific experiment but as the fulfillment of a state procurement order for the food industry. The project has been awarded a diploma at a national innovation competition.
Liana Shustova, a postgraduate student at the Belarusian State University of Food and Chemical Technologies, pointed out that there are very few domestic products in the healthy food segment, which is why they began working on the new recipes.
The Grain Products Laboratory has become a kind of scientific hub, where up to 100 kg of grain is sprouted annually. Attention is given to a wide variety of crops: from triticale to oats. Among the new developments are original know-hows. Previously, the scientists had made grain-based cocktails, cosmetic face masks, and fish bait. The latest idea is the green buckwheat brittle.
When creating the new product, the scientists adhered to the main principles of the modern national economy: local raw materials, import substitution, and a clear focus on export.
Andrei Barashkov, a postgraduate student at the Belarusian State University of Food and Chemical Technologies, emphasized that there are no analogues for this product on the market. “Buckwheat is our local raw material. We grow this crop. So the product suppliers will never leave the market, under any circumstances,” he noted.
The unique taste and original texture are achieved thanks to special syrup, the exact formula of which is kept secret. As the developers indicated, the product is soon expected to receive a patent.
